Easy gluten and dairy free hush puppies!
Mix all of the ingredients (except the frying oil) in a bowl until everything is evenly mixed together. The mixture will be thick (you should be able to roll it into a ball).
Heat the oil over medium heat in a heavy bottomed pan until it starts to shimmer. Drop a scoop (about 3 Tablespoons in size) of batter into the hot oil and fry until golden brown turning occasionally to make sure they brown evenly. When done, remove them from the oil and drain on paper towels before serving. Repeat with remaining batter.
