Here’s an afternoon snack that will leave you feeling indulgent but not guilty.
Preheat the oven to 325ºF. Grease a standard-sized loaf pan.
In a medium bowl, beat the egg whites with the mashed banana, oil, pumpkin, and coconut sugar. In a separate bowl, sift together the dry ingredients. Pour the dry ingredients into the wet and stir until no streaks of flour remain. Fold in the vanilla and crystallized ginger.
Scrape the batter into the greased loaf pan and bake for 40-50 minutes, until deep golden brown. Cool for 45 minutes and serve.

Great recipe, can’t wait to try it! When you say pumpkin, will the canned kind work? Also, I’ve never baked with coconut sugar but it definitely sounds interesting! Can that be found at the grocery store, or a specialty shop? Thanks for your help! I’m always looking for festive recipes in the fall!
