Crystallized ginger and dark chocolate baked together? Don’t knock it till you try it.
1. Preheat the oven to 350F.
2. Melt the butter over low heat and then set aside to cool.
3. In large bowl, mix the flours, sugar, baking soda, and salt together.
4. Add in the chocolate and ginger and stir to mix.
5. In separate bowl, beat the 2 eggs.
6. Add the applesauce, yogurt, and melted butter to the eggs and mix until combined.
7. Pour the butter mixture into the dry mixture and mix until just combined (don’t overmix!)
8. Pour batter into a greased loaf pan.
9. Bake bread for 50 minutes – 1 hour or until the top is golden brown and a toothpick comes out clean.
10. Let cool for 5-10 minutes…if you can!
