Description

Perfect for Christmas morning.

Ingredients

  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Cinnamon
  • ½ teaspoons Allspice
  • ¼ teaspoons Ginger
  • 1 dash Salt
  • 3 Tablespoons Cooking Oil
  • ¼ cups Brown Sugar
  • ⅓ cups Molasses
  • ⅓ cups Milk
  • 1 whole Egg
  • ½ teaspoons Vanilla

Preparation

Preheat oven to 350F. Line eight muffin cups with paper baking cups or spray with cooking oil.

In a small bowl, stir together flour, baking powder, soda, cinnamon, allspice, ginger and salt. Set aside.

In a mixing bowl, stir together oil and brown sugar. When blended, add molasses, milk, egg and vanilla. Mix until blended. Add flour mixture and mix until blended. Spoon mixture into prepared muffin cups.

Bake for 15 to 20 minutes or until muffins spring back when pressed lightly in the center. If desired, sprinkle with powdered sugar. A stencil for powdered sugar would be nice, too. Serve warm or cool.

Soft and moist, but a bit much on the molasses, I thought. The ginger, cinnamon, and allspice were overpowered by the flavor of the molasses. My two girls scarfed them down, though!
