Description

This flat bread is perfect with pasta or roasted veggies – or pretty much anything you want to eat it with… It has a crispy crust but the texture is light and airy and it also has the perfect amount of chewiness to it.

* Note that prep time includes rising.

Ingredients

  • FOR THE BREAD:
  • 1 cup Warm Water
  • 1-¼ teaspoon Active Dry Yeast
  • 1 teaspoon Sugar
  • 1-¾ cup Flour
  • ½ teaspoons Kosher Salt
  • _____
  • FOR THE TOPPING:
  • ⅓ cups Olive Oil
  • 3 cloves Garlic, Minced
  • ¼ cups Mozzarella, finely grated
  • 2 pinches Kosher Salt
  • 2 pinches Dried Parsley

Preparation

- In the bowl of a stand mixer, add the water, the yeast and the sugar and let foam.

– Mix the flour and 1/2 teaspoon of salt together and then add to the water/yeast mixture.

– Mix and then knead for 10 minutes. The dough should be really sticky… resist the urge to add flour.

– After kneading, transfer the dough to an oiled bowl and let rise until doubled (about 1 1/2 hours).

-When doubled, form into a ball and transfer to a well oiled and/or lined baking sheet and cover with plastic wrap.

– Let is rise for another 30 minutes.

– Shape the dough into a large rectangle by patting and stretching it out onto the pan.

– Cover again with plastic wrap and let is rise for a third time for another 1 1/2 hours.

– Preheat oven to 475.

For the topping

– Mix the 1/3 cup of olive oil with a few minced garlic cloves and pour that evenly over the dough.

– Sprinkle with the finely grated cheese, a bit of salt and the dried parsley.

– Place in the preheated oven and bake until golden brown (about 20 minutes). Then serve with your favorite pasta or roasted veggies.
