Description

This is my twist (albeit slight) on the blueberry muffin recipe that used to be on the box of Bisquick Baking Mix. But sometimes all you need is a little twist …

Ingredients

  • 2 cups Bisquick Baking Mix
  • ⅔ cups Milk
  • ⅓ cups Sugar
  • 2 Tablespoons Vegetable Oil
  • 1 whole Egg
  • ¾ cups Blueberries, Fresh Or Frozen
  • 10 teaspoons Turbinado Or Raw Sugar (optional)

Preparation

Heat oven to 400 degrees F. Place a paper baking cup in each of 12 regular-size muffin cups, or grease the bottoms only of muffin cups.

Stir all ingredients except blueberries and raw sugar just until moistened. Gently stir in blueberries.

Divide batter evenly among cups. Sprinkle the turbinado or raw sugar evenly over the tops of the muffins for a crunchy bakery-like top after they are baked.

Bake 10 to 13 minutes or until golden brown.

This fit the bill perfectly for me tonight! I had some fresh blueberries, wanted to make muffins, but didn’t feel like making a big mess. These were quick, easy and delicious. Thanks!
