Description

Toss the box – of easy muffin mix that is – and welcome the ease and simplicity of these corn muffins. Light and golden, crunchy outsides with a moist center. All of the goodness of a simple easy to make kid proof corn muffin recipe.

Ingredients

  • 1 cup Flour
  • 1 cup Corn Meal
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ⅔ cups Sugar
  • 2 whole Eggs
  • 1 cup Milk
  • 2 Tablespoons Molasses
  • ½ sticks Butter
  • ¼ cups Whole Kernel Corn (optional)
  • ¼ cups Sour Cream Or Shredded Cheese (optional)
  • ⅛ cups Chopped Mild Green Chilis (optional)
  • ¼ cups Bacon (optional)

Preparation

Add all of the dry ingredients into a mixing bowl (flour, corn meal, baking powder, salt, sugar)

Then add eggs, milk, molasses, butter (oil can be substituted easily) and optional ingredients.

Mix for two minutes by hand.

Heat oven to 400 degrees (F).

Fill muffin tins half full (this recipe will easily make 12 – 18 muffins)

Bake for 12 minutes.

Once done, remove from muffin tin and hide a couple from the kids and enjoy.

OPTIONAL VARIATIONS –
This recipe is easily adaptable. You can use oil instead of butter, add cheese and chilis or even corn and bacon.

I lost my go to corn muffin recipe and found this one. Easy,quick and delicious. I made plain but I used half the sugar (I always do this in recipes. Lovely eaten warm with my homemade jam! This is now my go to recipe.
