Why the inverted commas? Well, I’ve never ever tasted Irish Soda Bread in my life (because any bread with a nationality is expensive here). But the recipe is so easy I had to try it. And wow, it smelled like scones while baking. Love the crumbs!
1. Preheat the oven to 400F or 200C.
2. In a mixing bowl, add in the egg and then gradually add the buttermilk, whisking to mix.
3. Beat in melted butter until mixed.
4. In another bowl, sift and mix the flours and baking soda.
5. Stir in the buttermilk mixture into the sifted dry ingredients. The dough should be thick, like brownie mixture. If it’s too runny, add 1 tablespoon of flour at a time and if too dry, add 1 tablespoon buttermilk at a time.
6. Plop the dough into a medium loaf pan or a round baking tin.
7. With a sharp wet knife, slit the tip with 3 long gashes (I forgot this so the top burst open. Still good though.)
8. Bake for 40-50 minutes. Make sure the top is really browned. I took mine out a tad too early and the centre was slightly uncooked. But still yummy.
9. Let cook thoroughly before slicing. It’s very crumbly. I kept mine sliced, wrapped in baking paper and then plastic foil before freezing.
This is lovely spread with jam or even a squirt of honey.

Ha! I love your shark fin photo. I always love to see an Irish Soda Bread recipe that doesn’t include sugar or raisins, which are wrong, wrong, wrong (in my humble opinion). I have a similar recipe that uses some oat flour with the whole wheat, and it is an absolute killer. I’ll have to give yours a try one of these days, as it looks and sounds delicious.
