This quick and healthy carrot, banana, and raisin bread is perfect for a snack or light breakfast treat.
Preheat oven to 350 degrees F.
With a mixer, cream brown sugar and butter. Add bananas and mix until blended. Add vanilla, baking powder, cinnamon, nutmeg, and raisins. Mix until blended.
Add honey, beaten eggs, and salt. Mix until blended.
In a bowl, add carrots and flour stirring, until carrots are coated with flour. Add flour and carrots to the mixing bowl. Mix until just blended (about one minute).
Pour bread mixture into a greased loaf pan (you can use spray or butter). Let bread sit for ten minutes and then bake for 50 minutes. After 50 minutes, lightly place a piece of foil over the loaf pan to prevent it from getting too brown. Bake for an additional 10-15 minutes or until a toothpick inserted in the center comes out clean.
Let cool in pan for ten minutes and then remove to cool on a rack before slicing.

Thank you! Vanilla Paste is a syrupy flavoring made from vanilla seeds. It is less expensive than buying vanilla pods (and less work than extracting the seeds from the vanilla pod) and more so than vanilla extract, however, their usage is exactly the same. One teaspoon of vanilla paste = One teaspoon of vanilla extract = One teaspoon scraped vanilla pod. You can buy it at places like Williams Sonoma, Sur La Table, or smaller baking specialty shops. I’m sure there are online resources as well. Hope that helps!
