This zucchini bread is moist, rich, and packed full of chocolate. What more could you ask for?
Preheat oven to 350 degrees.
Mix the zucchini with salt; set aside.
Sift together dry ingredients.
In a separate bowl, beat the eggs; mix in vegetable oil and vanilla extract.
Mix wet ingredients into dry; fold in zucchini.
Lightly flour chocolate chips and fold into batter.
Pour into a greased loaf pan. Bake for about an hour or until a knife inserted in the center comes out clean.

This was WONDERFUL!!! I did the recipe as stated and it was GREAT!
If brownies were a bread this is what it would taste like.
FYI I kept in the fridge and it was supper yummy like that too.

I made this bread last night and it was great. If recipe appears dry all you have to do is let the zucchini sit with the rest of the ingredients for a while. They emit enough moisture in a few minutes to make it easier to mix. I though this bread was great. And so did my family!

I took brandyu’s advice and cooked mine for 45 minutes – perfect!
Bread is moist and delicious. I thought the batter was a little dry (my dry ingredients wouldn’t mix in), so I added an extra egg and a couple more tablespoons of oil. Probably my fault, I only had medium eggs on hand! I also cut back on the chocolate chips.
I will definitely make this again, maybe next time I’ll make them into muffins! YUM!

I made this tonight and it is DELICIOUS! The only thing that I did differently was I used mini-chips because it’s all I had. I would also suggest checking the bread at 45 minutes; I took mine out at 55 minutes but wished I would have pulled it a few minutes sooner.
