Description

A moist chocolate batter with gooey chocolate chips and fresh bites of sweet and tangy raspberry. What could be better?

Ingredients

  • 1-¼ cup Flour
  • ¼ cups Cocoa Powder
  • ¾ cups Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • ⅓ cups Canola Oil
  • 1 whole Egg
  • ⅓ cups Milk
  • 1 teaspoon Vanilla
  • ½ cups Sour Cream
  • 1 cup Raspberries
  • ½ cups Chocolate Chips

Preparation

1. Sift together flour, cocoa powder, sugar, salt and baking powder in a large bowl.

2. In another bowl whisk together oil, egg, milk and vanilla. Pour into dry ingredients and stir just until moistened.

3. Stir in sour cream until combined. Fold in raspberries and chocolate chips.

4. Pour batter into 12 paper-lined, regular size muffin cups.

5.Top with additional chocolate chips and raspberries if desired.

6. Bake at 400ºF for approximately 20 minutes or until toothpick inserted in the centre comes out clean.

I made these right away. We had breakfast for dinner on the menu plan, so I thought muffins and eggs. My kids were not disappointed to see chocolate muffins on the table. They were easy to make and very tasty. Thanks for sharing the recipe.

Oh my word! These have my name written all over them! Chocolate AND Raspberries?!?!? My two favorite tastes! I WILL be making these very soon, and I’m not sharing with anybody! :-)
