Description

I love these muffins (and so did the fiancée’s family, thank goodness!). I made them because I did not have any molasses to make my usual muffins, and I ended up loving the lighter taste.

Ingredients

  • 1-½ cup Wheat Bran
  • 1 cup Buttermilk
  • ⅓ cups Vegetable Oil
  • 1 whole Egg
  • ⅔ cups Brown Sugar
  • ½ teaspoons Vanilla Extract
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Raisins (optional- I Don't Put These In)

Preparation

1. Preheat oven to 375 degrees.
2. Grease a muffin tin or place liners in cups.
3. Mix together wheat bran and buttermilk, let stand for 10 minutes.
4. Beat together oil, egg, sugar and vanilla. Add to the buttermilk/bran mixture.
5. Sift together flour, baking soda, baking powder and salt.
6. Stir sifted ingredients in with the buttermilk mixture until just combined. Stir in raisins if using.
7. Spoon batter into muffin tins and wrappers.
8. Bake 15-20 minutes or until a toothpick inserted in the center comes out clean.

Note: These get a little crumbly when you freeze them.
