Classic banana bread with a healthy, crunchy twist.
Preheat oven to 350 degrees.
Mix dry ingredients in a medium-sized bowl and set aside.
Blend oil, sugar, and lemon rind in a large bowl until creamy. Beat in eggs and mashed banana.
Add dry ingredients to the sugar mixture and blend until smooth.
Pour batter into a greased bread pan and bake for about an hour. Cool before slicing.
