These are my all-time favorite muffins! Perfect for early mornings or lunches during the Thanksgiving and/or Christmas season.
Preheat oven to 375 F.
In a bowl add streusel ingredients. Mix together until crumbly and then set aside.
In a separate bowl, mix together dry ingredients for the muffins (flour, sugar, baking soda, salt). In another bowl (geesh, there’s a lot of dirty bowls here) mix the wet ingredients in the order listed: eggs, buttermilk, melted butter, vanilla and lemon zest (use a rasp).
Mix the wet with the dry (not too much) and sprinkle the cranberries on top. Mix all together until just moistened. don’t overdo it!
Spoon batter into a paper-lined 12-count standard size muffin tin and top with streusel. Oh ya! Put it in the oven and bake for 25 minutes, and then they’re done!

they were delicious! worked perfectly. i was very thankful for yummy, warm muffins this morning minus the dirty dishes! I’ll definitely make them again.
A huge hit with my 1 year old. She devoured an entire one. My 4 year old wasn’t big on the tartness of the cranberries. Oh well. I thought they were great.

Just made this batter and plan to make in the morning.
Mixed streusel topping – minus the butter which I’ll add in the morning. Just sat it covered on the counter.
Mixed batter – minus the cranberries which I’ll fold in in the morning just before baking. Covered and put in fridge.
Hoping this makes fresh muffins for breakfast a little easier in the morning!
Also, didn’t have lemon so I replaced with a little orange zest.
