Quick, easy, relatively healthy popover-like muffins made with ingredients you’ll probably have on hand. Can be adapted easily to one’s tastes. A kind reader described them as dry on the outside and moist on the inside like a popover! Exactly!
Mix dry ingredients. Beat cottage cheese into the egg and then add oil and honey. Stir the dry and wet ingredients together with a fork. This will be lumpy and somewhat dryish.
Divide among six lightly greased muffin cups and bake at 400 degrees F for 15-20 minutes or until lightly browned on top.
This is a very basic recipe that can be changed up as you desire to make them savory or sweet. These are not terribly sweet to begin with, which makes them healthier. Adding a little topping of sugar will add some sweetness. You can add a small handful of blueberries or a swirl of jam in the batter. Or you can make it savory by adding a little shredded cheese on the top before baking. Herbs can be added as well to taste.
Note: This only makes 6 smallish muffins which can be good if you are just making these for your own breakfast or if you tend to overdo it!

I want to try these. Is it the dry curd cottage cheese that is used to make these muffins? Will let you know how yummy they are when I try them. Love cottage cheese.

these are delicious! they are dry on the outside like a popover, and moist and fluffy on the inside. I wanted sweet muffins so I added 2 xtra Tbl of honey. I also added flax seeds, cinnamon and topped each one with a sprinkling of splenda brown sugar. they are sooooo great!
