Cottage cheese and dill make a great combination in this bread.
Activate yeast in ½ cup warm water with a pinch of sugar. Heat cottage cheese and butter, add sugar, dill, salt and 1 beaten egg. Remove from heat and let cool slightly, then add yeast. Mix in flour 1 cup at a time along with remaining 1 cup water and knead for 10 minutes. Let rise until doubled in a bowl greased with spray, butter or oil and cover with a towel. Let rise until doubled.
When doubled, punch down dough and divide in two. Roll out two loaves and place them in greased bread pans. Let dough rise again until doubled.
Bake at 375ºF for 35 minutes or until internal temperature is 180ºF. About 3/4 of the way through baking, brush the tops of the loaves with beaten egg whites for a golden top.
