These are tasty and so easy to make. They go great with stew, chili or soups. I used green peppers but orange or yellow could be used and so could Poblano peppers.
Wash peppers, cut them in half and take out seeds and stems. Set peppers aside.
Make cornbread batter according to the directions on the box. In addition to the additional required ingredients specified on the box instructions, add 2 tablespoons chopped pimentos and 1/2 cup cheese.
Fill pepper halves with cornbread batter. Bake for 25 minutes at 350 degrees F, or until golden brown.
