These muffins are moist and sweet, perfect by themselves or with honey and butter, or as an accompaniment to savory dishes.
Preheat the oven to 350ºF.
In a large bowl combine the eggs, buttermilk, oil, honey and sugar. Whisk in the cornmeal, flour, salt and baking powder. Pour the batter evenly into a greased jumbo muffin pan (my pan makes 6 muffins).
Bake for 45 minutes or until a cake tester inserted in the center comes out cleanly. Enjoy!

Please check and correct the amount of baking powder.
It can not possibly be 2 and 1/2 cups!
