A little added twist to your favorite banana bread recipe.
Preheat oven to 350ºF. Grease and flour 1 large loaf pan (this batch can make 2 smaller loaf pans, too).
In the bowl of an electric mixer, combine bananas and brown and granulated sugars and mix well. Add eggs, one at a time, mixing well after each addition. Add oil, vanilla and cinnamon and mix until completely combined.
In a separate bowl, combine flour, baking soda and powder and salt.
Slowly incorporate flour mixture into banana mixture, scraping down sides and mixing well. Finally, add in shredded coconut and stir until combine.
Pour batter into prepared pan and top with mixture of coconut, brown sugar and cinnamon. Place into oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool. Best served/devoured while still a bit warm from the oven, smothered in butter!

i made this bread for my very picky boys this morning and they loved it! i cut the brown sugar by 1/4 and used finely grated coconut and carrot… it was a hit.. thanks so much! the texture was soft and i felt really good about giving them something that had whole wheat in it. (i also cut the all purpose flour inhalf and substituded finely ground almond meal)

this sounds great! I can not wait to make it this wkend. I think im going to put some crushed pineapple or rings on top…mmmm
