Description

A slice of this healthy banana bread is perfect when you’re in the mood for something light, homey, and delicious. I use whole wheat flour and rolled oats, which makes for a chewy, soft-textured body. The bread actually dances around in your mouth as the flavors of banana, coconut, and vanilla escape from the plate. Enjoy and be merry!

Ingredients

  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Flour
  • ½ cups Organic Rolled Oats
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Sugar
  • ¼ cups Yogurt Butter
  • ½ cups Natural Unsweetened Applesauce
  • 1 whole Egg
  • 2 whole Egg Whites
  • 2 whole Large Bananas
  • ¼ cups Nonfat Organic Plain Yogurt
  • ½ teaspoons Vanilla Extract
  • ½ cups Sweetened Coconut Flakes

Preparation

Preheat oven to 350ºF. Whisk the flours, oats, baking soda, and salt in a medium bowl. Set aside.

Place sugar, butter, and applesauce in a large bowl and beat with a mixer on high for 1 minute. Add the eggs and egg whites, one at a time, and beat well. Add bananas, yogurt, and vanilla, and mix until blended. Add the flour mixture and beat on low speed until batter is moist. Stir in the coconut flakes.

Pour batter into a 9×5-inch bread loaf pan coated with cooking spray. Bake at 350ºF for 1 hour, or until a wooden pick inserted in the middle comes out clean. Cool for 10 minutes in the pan. Remove from the pan and let cool completely on a wire rack.
