Tasty morning muffins
Heat oven to 350F. Spray or grease muffin tins (makes about 15 standard sized muffins).
Combine flour, sugar, bran, flax meal, baking powder, soda, salt and coconut in a large bowl. Set aside.
In a medium bowl, lightly beat the eggs. Stir in buttermilk, milk, and oil, then add to dry ingredients and stir until just blended. Add bananas and stir lightly.
Fill muffin cups and bake 15-20 minutes until golden brown.
