Description

Cinnamon Coffee Cake that isn’t just for coffee. This moist delicious treat is a family favorite and I hope will become one of yours too!

Ingredients

  • 1 cup Sour Cream
  • 1 teaspoon Baking Soda
  • 6 Tablespoons Butter
  • ¾ cups Sugar
  • 1  Egg
  • 1 teaspoon Vanilla
  • 1 cup Plus 2 Tablespoons Flour
  • 1 pinch Salt
  • FOR THE CINNAMON SUGAR:
  • ¼ cups Sugar
  • 1 teaspoon Cinnamon

Preparation

Preheat oven to 350ºF. Grease 8×8 pan and set aside.

Combine sour cream and baking soda in small bowl, set aside. Combine sugar and cinnamon for the cinnamon sugar mixture. Set aside as well.

Cream butter and sugar until fluffy. Pour in sour cream and baking soda mixture and mix. Add egg and vanilla, mix until combined. Add flour and pinch of salt. Mix until no streaks of flour remain.

Divide batter in half. Place one half in prepared pan, spread with offset spatula. Sprinkle half of the cinnamon sugar mixture over first layer. Place remaining batter on top, spread with offset spatula and top with the remaining cinnamon sugar.

Bake in 350ºF oven for 20 minutes. Rotate and bake another 10 minutes. Check with a toothpick to see if the cake is fully cooked. If not, return to the oven another 3 minutes.

Cut in three rows, three pieces per row. Serve warm.
