Fall just arrived—in my mouth.
Preheat oven to 350ºF. Spray standard muffin tins with cooking spray.
In a bowl, mix flour, oats, baking powder, salt, and cinnamon. Set aside.
In another bowl, mix all ingredients for crumb topping and set aside.
In a mixer, cream banana and sugar. Add in egg, almond extract, honey, and milk. Combine well. Fold in dry ingredients. Mix until combined. Gently fold in apples.
Pour into muffin tins, filling 3/4 full. Sprinkle the top of batter with crumb topping mix.
Bake 18-22 minutes until an inserted toothpick comes out clean.
