Chocolate Muffins infused with coffee and loaded with chocolate chips.
Preheat oven to 400ºF.
Cream the butter and sugars until fluffy. Add the egg, sour cream, and vanilla and beat until creamy.
Sift the dry ingredients and add alternately with the milk and coffee, beating slowly. Do not overbeat. Stir in the chips by hand.
Scoop into 15 cupcake liners. The liners will be full. Bake at 400ºF for 18 minutes. Remove from tin and cool on wire rack.
