Gluten-free chocolate chip zucchini muffins.
1. Preheat oven to 350ºF.
2. Grease a 12-count standard size muffin pan or line pan with muffin cups/parchment paper (recipe makes roughly 10 muffins so you don’t need to prep all of the wells).
3. In a large bowl mix together flour, baking powder, baking soda, salt and cinnamon.
4. Mix in the grated zucchini.
5. Whisk eggs in a separate bowl. Add the eggs into the flour along with honey, oil, vanilla and lemon zest. Mix.
6. Mix in the chocolate chips.
7. Pour 1/4 cup of batter into each muffin cup.
8. Bake for 20-22 minutes.
9. Check for done-ness using the “toothpick test”. If nothing sticks to the toothpick, they’re done. Enjoy!
