Description

Incredibly fast, easy chocolate chips muffins for breakfast with a crispy, sweet topping. Kid friendly! Taste bud approved!

Ingredients

  • 2 cups Bisquick Baking Mix
  • ¼ cups Sugar
  • 1 whole Egg
  • ⅔ cups Milk
  • 1 cup Mini Semi-sweet Chocolate Chips
  • ¼ cups Chopped Nuts (optional)
  • 2 Tablespoons Sugar
  • 2 teaspoons Cinnamon

Preparation

Preheat oven to 400 degrees.

Cinnamon sugar topping: mix 2 tbsp sugar and 2 tsp cinnamon together in a bowl and set aside.

Combine Bisquick, sugar, egg and milk. Beat with a spoon till combined (will be lumpy). Stir in mini chips and nuts, if using.

Fill greased or lined muffin cups ¾ full with batter. Sprinkle each muffin with ½ tsp sugar-cinnamon topping.

Bake 15-17 minutes or until lightly browned. Serve warm with gobs of butter.

Note: I have used regular sized chocolate chips instead of the minis just fine. Whatever you have on hand works. Chunks are shown in the picture.

These are delicious and so easy to make! I needed an easy/quick recipe to make muffins for a breakfast meeting and yours was the one I chose. I’m so thankful that I did. Thanks for the recipe!
