Description

This amazing chocolate chip banana bread is made extra moist with the addition of a secret ingredient: brewed coffee!

Ingredients

  • 4 whole Ripe Bananas
  • ⅓ cups Butter, Melted
  • ¾ cups Sugar
  • 1 whole Egg, Beaten
  • 1 teaspoon Vanilla
  • ¼ cups Strong Brewed Coffee
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1-½ cup All-purpose Flour
  • ½ cups Chocolate Chips

Preparation

Preheat oven to 350ºF. Grease a standard size loaf pan.

Peel bananas, break them up and toss them into a bowl. Mash with a potato masher (I leave some banana pieces so you get occasional nice bites of banana in the bread; don’t mash until the bananas are completely liquefied).

To the bananas, add the rest of the wet ingredients and stir with a wooden or plastic spoon. Add dry ingredients and stir until combined. Do not overmix. Fold in chocolate chips.

Pour into prepared loaf pan and bake for 55-60 minutes or until center springs back when lightly touched.

Delicious! I’ve made this several times, and it’s fantastic. I usually make it as muffins which takes about 20 min to bake.

Great bread. I cooked it for 57 minutes, and it didnt look quite done, so i cooked it for five more minutes, and it looked done. I removed it and let it cool for 10 min..But when i removed it from the loaf pan, it started crumbling uncontrollably, for some reason. I don’t know if i did something wrong, but it wouldnt stay together, and eventually it just collapsed. It didn’t look pretty, but the bread itself was delicious, which is why i gave it 4 stars. I just wish it would have stayed together.
