A delicious chocolate banana bread studded with cacao nibs. Perfect for breakfast or an afternoon snack.
Preheat the oven to 350 F. Grease a 9×5 loaf pan.
In a medium size bowl, combine the flour, cocoa powder, baking soda, and salt. Set aside.
In a small saucepan over low heat, melt the butter. Remove from heat, pour into a mixing bowl and let it cool slightly. Whisk in the eggs. Then add the brown sugar, bananas, yogurt, and vanilla extract. Whisk until smooth. Add the dry ingredients and stir until combined, being careful not to over mix. Stir in the cacao nibs.
Pour the batter into the prepared loaf pan and bake for 40-50 minutes, or until you can insert a toothpick in the center and it comes out clean. Remove from oven.
Let the bread cool in the pan for 30 minutes, then take it out and let it cool completely on a wire rack. Slice, serve and enjoy!
Notes:
1. I used a mix of plain and chocolate covered cacao nibs, but feel free to use one or the other.
2. The cacao nibs can be replaced with a mix of chopped nuts and chocolate chips.
