Not your mama’s cornbread! From the Cayman Kai Resort on Grand Cayman Island—you won’t believe what a difference a little nutmeg can make!
Almost good for dessert!
In a bowl, cream together butter and sugar. Add beaten egg.
In a second bowl, combine cornmeal, flour, baking powder and nutmeg. Add wet ingredients to the second bowl plus the milk and stir until combined and there are no lumps.
Grease an 8×8 baking dish and pour batter into the dish.
Bake at 425 degrees for 20-25 minutes.
To add insult to injury, I’ve served this with honey butter. Oh my!
