Description

Light, moist, fluffy, and a little sweet, this cornbread really is like eating a little piece of cake for dinner. Perfect with chili, soup, or salad.

Ingredients

  • ½ cups Cornmeal
  • 1-½ cup Flour, All Purpose
  • ¾ cups Sugar
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • 1-½ cup Milk
  • 2 whole Eggs
  • ½ cups Butter, Melted

Preparation

In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

In a separate bowl, whisk together milk, eggs, and butter. Fold wet ingredients into the dry ingredients until just combined (lumps are okay).

Pour into an 8 x 8″ baking dish sprayed with cooking spray.

Bake at 375 degrees 30-35 minutes, or till a toothpick inserted in the center comes out clean.

This cornbread is great! I’m always cautious to try a homemade cornbread- the boxed version usually just turns out so much better. See if I ever make that mistake again. This was just as good, if not better. Loved it!

Made this tonight. The family loved it. They usually hate my corn bread…too dry and crumbly. I agreed. This was moist and wonderful and a bit sweet! They almost wouldn’t try it…but they were glad they did. Good job!
