Description

After tasting this moist, sweet, buttery cornbread at a potluck, the hunt was on for its maker and the recipe. She shared it with me and now I am the hunted every time I bring this to a potluck. I always hear the question “Who made the cornbread?” Hope you enjoy it.

Ingredients

  • 2 cups Baking Mix (Like Bisquick)
  • 1 cup Cornmeal
  • ¾ cups Sugar
  • 1 cup Melted Butter
  • 1 cup Buttermilk (or Sour Milk Works Fine)
  • 8 ounces, weight Cream Style Corn
  • 2 whole Eggs, Slightly Beaten
  • ½ teaspoons Baking Soda

Preparation

Generously coat a 9×13 pan with cooking spray.

Combine all ingredients in a large bowl and mix well. Place batter into the prepared pan and bake at 350F for 20-30 minutes or until bread tests done with a toothpick.

This bread is great! I took it to a potluck and everyone asked “Who made the cornbread?” Hahahaha… sweet and soft. Great recipe!

This was awesome. It had the perfect sweetness and texture. I’m a Yankee, so I don’t like my cornbread to be dry and crumbly. If that’s what you’re looking for, then this would not be for you. I like it sweet, moist, and cake-like and this totally fits the bill. Delish!
