Easy to make buttery loaf that’s perfect for breakfast or any time.
Preheat oven 350ºF.
In a large bowl, cream together eggs, sugar and butter spread. Beat in the buttermilk.
In a separate bowl, sift together the flour, 1/4 cup of cornmeal, baking powder, baking soda and salt.
Beat the dry ingredients into the wet until combined. Butter a loaf pan (I also insert a sheet of parchment paper for easy removal) and pour in the batter. Sprinkle the remaining tablespoon of cornmeal over the top. Bake for 45–50 minutes or until the bread is a light golden brown and an inserted toothpick comes out clean.
