Description

Amazing banana bread—the brown sugar gives it a richer, deeper flavor. Also try adding 1 to 2 cups chocolate chips or fresh blueberries for a different twist.

Ingredients

  • 1 stick Butter
  • 1 cup Brown Sugar, Packed
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 4 whole Ripe Bananas
  • 2 cups Flour
  • 3 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Chopped Walnuts
  • 1 cup Chocolate Chips Or Blueberries (optional)

Preparation

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan. You can use butter, but I find that regular cooking spray works just as well.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well with each addition.
4. Add vanilla, cinnamon, and bananas, and mix well. If you’re using a stand or handheld mixer, there’s no need to mash the bananas first.
5. Add flour, baking powder, and salt and stir just to combine.
6. Fold in walnuts and/or chocolate chips and blueberries.
8. Pour batter into the loaf pan.
9. Sprinkle brown or white sugar and a few walnuts on top (optional but definitely tasty) for crunch.
10. Bake in the preheated oven for 1 hour, until a toothpick inserted into the center of the loaf comes out clean.

I’m not sure what happened but it didn’t turn out too good…I’m wondering if it was because of the amount of baking powder…hmmm.

This is really good banana bread. I highly recommend topping it with the brown sugar and nuts as suggested. It puts a really tasty crust on the top. Thanks for the terrific recipe!
