Traditionl Irish soda bread without fruit or sugar. This is quick and easy. I love it toasted with butter and jam or served along with soup.
Preheat the oven to 425ºF.
Stir together flours, soda, baking powder and salt in a large bowl. Stir in buttermilk. I use my hands at this point and get it into a shaggy ball, then knead it on the counter for a few minutes until it comes together.
Shape into an 8-inch round about an inch thick. Place on a cookie sheet. Use a sharp knife to cut a large cross into the bread, making sure not to cut the whole way through.
Bake for 45 minutes. You will know it’s done when it makes a hollow sound when tapped on the bottom.
This is great warm with butter. It’s got a biscuit-y texture that is wonderful and a crunchy crust.
