This muffin mix will keep in your fridge for a good 5 days. I love waking up in the morning and throwing a batch in the oven. Your kitchen will smell delish!
Pour water over 100% bran, set aside. Mix sugar and oil. Add eggs, buttermilk and hot bran mixture and mix well. Add flour, salt and soda and mix. Add the bran flakes. Bake in sprayed muffin tins, 400 degress for 18 – 20 minutes.
