Description

This is super easy—it does start with a boxed cake mix, after all. It’s a yummy way to enjoy summer berries! I use low-sugar cake mix and unsweetened applesauce and it’s perfectly sweet.

Ingredients

  • 1 box (18.25 Oz. Box) Reduced Sugar Yellow Cake Mix
  • 1 whole Egg
  • 2 whole Egg Whites
  • 1 package (8 Oz. Size) Reduced Fat Cream Cheese
  • ½ cups Unsweetened Applesauce
  • 1 teaspoon Vanilla
  • 1-½ cup Blueberries, Fresh Or Frozen

Preparation

Preheat oven to 350ºF. Butter and flour a 10″ bundt pan or two 8″ loaf pans.

In a large bowl, beat together cake mix, eggs, cream cheese, applesauce and vanilla until light, fluffy and well-combined. Fold in blueberries and pour into prepared pans.

Bake 45 minutes or until golden brown on top and a toothpick inserted in the middle comes out clean. Cool in the pan before removing.
