Tasty, delicious blueberry muffins – perfect for school mornings!
Preheat your oven to 400F.
Combine the flour, sugar, baking powder and salt in a large mixing bowl.
In a smaller bowl combine the eggs, milk and oil with a whisk. Add this to the dry ingredients and mix gently with a spoon just until combined. Carefully fold in the blueberries.
Pour batter into greased muffins tins, filling about 3/4 full. Place in the preheated oven and bake for about 20 minutes. Ovens do vary, so watch them to make sure they don’t overcook. Check to see if they’re done with a toothpick inserted in the middle.
These are great! They freeze very well and are so versatile.
