Healthier version of banana bread.
Preheat the oven to 350ºF and spray a loaf pan with canola oil.
Combine the bananas, applesauce, soy milk, and agave nectar into a large bowl. In a separate bowl sift together the flours, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the blueberries. Pour the batter into the loaf pan.
Bake for 45–50 minutes, or until an inserted toothpick comes out clean. Let cool for 10 minutes and serve.
