Description

Start your morning off with a batch of blackberry lime muffins. They are the perfect muffins for summertime.

Ingredients

  • 1-½ cup All-purpose Flour
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • ½ cups Sugar
  • 2 whole Limes, Zested
  • 1 whole Egg
  • ¼ cups Canola Oil
  • ⅓ cups Buttermilk
  • 1 Tablespoon Fresh Lime Juice
  • 1 teaspoon Vanilla Extract
  • 1 cup Blackberries
  • 2 Tablespoons Turbinado Sugar

Preparation

1. Preheat oven to 400 degrees. Line a muffin pan with 9 paper liners or spray with cooking spray. Set aside.

2. In a medium bowl, whisk together flour, salt, and baking powder.

3. In a small bowl, add the sugar and lime zest. Rub sugar and zest together until fragrant. Add sugar and zest to the flour mixture. Whisk ingredients together.

4. In a glass measuring cup or small bowl, mix egg, canola oil, buttermilk, lime juice, and vanilla extract together.

5. Pour the wet ingredients over the flour mixture. Slowly stir together, the batter will be thick. Don’t over mix. Gently fold in the blackberries. Stir carefully or you will have purple muffins.

6. Fill 9 muffin cups with the batter. Sprinkle each muffin with turbinado sugar.

7. Bake muffins for 17-20 minutes, or until muffins are golden brown and a toothpick comes out clean. Let muffins cool on a cooking rack.

Note: you can use frozen berries, but try to use fresh blackberries. They make these muffins extra special. This recipe only makes 9 muffins; feel free to double it.

These muffins sounds delish! As I live in the NW, I can’ t wait to try these with fresh picked blackberries! (But in the meantime, blueberries might make a yummy substitution.)

(Recipe For Delicious— Turbinado sugar is also known as Sugar in the Raw- which is a brand name. Large-crystal sugar would work fine I imagine, as the sugar is used on the tops on the muffins.)

Oh wow! These look just heavenly! If I ca’nt find turbinado sugar, what kind should I substitute?

Tasty! Just made these and they are very good. I only added the juice of 1 lime, but would have added a little more! Also, I didn’t have any buttermilk, so I just added regular milk, but I’m sure they would be even tastier with some buttermilk! Easy and yummy! A perfect combo for my blackberry-lime lovin’ husband! :)

Tried these yesterday, mmmm yummy! A great sweetness from the blackberry with a refreshing zing from the lime. I had to taste one right out of the oven, and for some reason, mine turned out a bit dry at first. Maybe I just over-stired? But after sitting for a day, the moisture from the blueberries has really made these good and moist. I’d suggest that if you’re going to eat them right away, maybe throw in a few tablespoons of sour cream or Greek yogurt. Definitely will try them again!
