My mom made me enter a bread baking contest when I was in 4th grade, and I won $20 for it! I’ve been using this recipe ever since.
In a mixing bowl, cream butter and sugar. Mash the bananas, then add them to the butter/sugar mix. Add the eggs and vanilla. Blend well.
In a separate bowl, mix the dry ingredients. Add to the banana mixture, alternating with the buttermilk. Add the walnuts if you want! Mix well. Pour the batter into a greased and floured loaf pan. Makes 2 loaves.
Bake at 325F for 1-1 1/4 hours.

Delicious!!!! Moist and not too sweet. I used I Can’t Believe It’s Not Butter instead of regular butter because i made this on a whim and didn’t want to wait for butter to come to room temperature. It still turned out great! I’m so glad i tried this recipe.
