Description

A moist, fluffy, and flexible muffin recipe. Make it with your favorite fruits and as healthy as you like it, and enjoy at any time of day!

Ingredients

  • ½ cups Margarine, Melted And Cooled
  • 1 cup Milk Or Fruit Juice (such As Orange Juice Or Fruit And Veggie Blends)
  • 1 teaspoon Vanilla
  • 2 whole Eggs
  • 1-¼ cup All-purpose Flour
  • 1 cup Whole Wheat Flour (or An Additional Cup Of All-purpose)
  • 1 cup White Sugar
  • 4 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ cups Fresh Or Frozen Blueberries
  • ½ cups Fresh Or Frozen Raspberries
  • ½ cups White Chocolate Chips (Optional)

Preparation

Preheat oven to 400ºF. Line 12 muffins cups with paper liners or spray with cooking spray.

In a small bowl, whisk together melted margarine, milk (or juice), vanilla and eggs.

In large bowl, stir together flours, sugar, baking powder and salt. Blend wet ingredients into dry ingredients, stirring just until combined. Gently fold in berries and chocolate chips, if using. Divide over 12 muffins and bake for 18–20 minutes, until light brown and an inserted toothpick comes out clean (tops should feel fairly firm and bounce back when pressed lightly). Let sit in the muffin pan for 10 minutes before removing to a rack to cool completely.

This is extra delicious with a drizzle of icing, or add some orange or lemon juice to the icing for a fresh twist!
