Why go gluten-free when you can go grain-free? Fast and easy grain-free muffins that don’t taste like dog treats.
Blend pecans in food processor until smooth, the consistence of peanut butter.
Add bananas and blend until smooth. Add eggs and continue to blend. Add baking soda, apple cider vinegar and vanilla extract and blend once more.
Pour batter into paper lined muffin tins (I usually get 9-10 muffins). Bake at 400ºF for 10-15 minutes or until the muffins don’t jiggle like the back of my arms.
