Description

These muffins are a favorite around our house as a snack — they’re totally delicious and have a great texture, all while being not too sweet, and very low in fat! The buttermilk keeps them moist, while there’s only 2 Tbs of oil in the whole recipe. The banana flavor really shines through!

Ingredients

  • ¾ cups Buttermilik
  • ¾ cups Mashed Ripe Banana
  • 1 whole Egg
  • 2 Tablespoons Vegetable Oil
  • 1 teaspoon Vanilla
  • ½ cups Granulated White Sugar
  • 1-½ cup AP (all-purpose) Flour
  • ½ cups Quick Cooking Oats
  • 3 Tablespoons Walnuts, Toasted And Chopped
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Salt

Preparation

Preheat oven to 375. Grease muffin pan or use muffin liners to line 12 muffin cups.

Mix first six ingredients (buttermilk through sugar) together in a large bowl. (Note that 3/4 cup of mashed banana is usually about two medium very ripe bananas)

Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined.

Portion into 12 muffins in prepared pan.

Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean!

Can I use regular milk if I don’t have buttermilk?
