Description

Uber easy and adjustable muffin recipe: 10 minute preparation, 20 minute backing, lifetime of compliments. Don’t be afraid to experiment. I also made a fine version of it as cupcakes, using apricots and maple syrup.

Ingredients

  • 1 cup Flour
  • ⅓ cups Sugar
  • 2 whole Bananas
  • 1 Tablespoon Nutella
  • 1 Tablespoon Cocoa Powder
  • ¼ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • ⅓ cups Oil (anything But Olive Oil)
  • ½ teaspoons Vanilla Extract
  • 1 pinch Salt
  • Some Butter To Lubricate The Baking Dish
  • 1 whole Egg

Preparation

Mix all dry ingredients in one bowl. Mash the bananas and mix all of the wet ingredients in another (the Nutella goes into this bowl). Gently mix both mixtures until even, and pour the mixture into previously lubricated muffin baking dish (or into paper cupcake cups on a baking dish).

Bake at 160c for 20 minutes; ready when a toothpick comes out dry (or, if you’re using more wet ingredients than written here, almost dry).

Very good! Not quite as prominent a banana flavor as I’d prefer, but easy and quick, and quite tasty. Thanks for the recipe!
