Description

An easy recipe that creates a moist and delicious bread. The streusel topping sets it all off perfectly.

Ingredients

  • FOR THE BREAD:
  • 3 whole Very Ripe Bananas, Mashed
  • 2 whole Eggs
  • ⅓ cups Melted Butter
  • ½ cups Sugar
  • 1 teaspoon Banana Extract (optional)
  • 1-¾ cup All-purpose Flour
  • 2-¾ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1-½ teaspoon Ground Cinnamon
  • ½ cups Chopped Walnuts

  • FOR THE STREUSEL:
  • ¼ cups All-purpose Flour
  • 2 Tablespoons Softened Butter
  • 2 Tablespoons Sugar

Preparation

Preheat oven to 325ºF. Spray a loaf baking dish with nonstick spray.

In a medium bowl, combine mashed bananas, eggs, butter, sugar and extract. Mix thoroughly, then add dry ingredients: flour, baking powder, salt and cinnamon. Mix until combined then stir in chopped walnuts.

Pour batter into the baking dish.

Now make streusel topping. Combine flour, butter and sugar until crumbly. Sprinkle on top of the batter. Bake for 1 hour to 1 hour and 10 minutes.

Allow to cool before slicing.

Cook’s note: This recipe can be made without the streusel topping as well. Also, if you don’t have the banana extract, no biggie. This will still taste wonderful without it.

It comes out great every time. I don’t use the banana extract, but like the recipe says, it’s just fine without it.

LOVE THIS! Easy and delicious. When I used the softened butter to make the streusel, it turned into a paste. So the next time I just used cold butter and cut it in with a fork and that gave me a lovely crumbly texture.
