Another classic made healthier with Greek yogurt.
Preheat oven to 375ºF. Grease a muffin pan and set aside.
In a large bowl, whisk together the flour, baking powder, baking soda and salt. Make a well in the center and set aside.
In a separate bowl, stir together the yogurt, eggs, butter, brown sugar, bananas and vanilla. Add wet ingredients into the dry, stirring just until batter comes together.
Fill each muffin cup almost to the top. Bake for 15 minutes, or until a tester inserted in the middle comes out clean.
Cool slightly in the pan before moving to wire rack to cool completely.
