I have no clue where my daughter got this recipe, but she loves to make these muffins when we have bananas that are getting a little too ripe!
Combine the mashed bananas, sugar, egg and melted butter (or margarine) together, and set aside. In another bowl, combine the baking soda, baking powder, salt and flour. Mix the wet and dry ingredients together, using caution not to over mix. Pour into greased muffin tins and bake at 350 degrees for 20 minutes or until a knife or toothpick inserted in the center comes out clean.
