A delicious banana bread variation made with coconut. Can also be made with sugar instead of Stevia.
1. Preheat oven to 350 degrees. Spray a loaf pan with nonstick spray, or grease lightly.
2. Mash up bananas in a large bowl. Add coconut cream (or coconut milk) and eggs. Whisk well to combine. Add vanilla extract and combine.
3. Sift Stevia, flour, baking powder, baking soda and salt together. Add to the mixing bowl. Whisk together until just combined. Add shredded coconut and whisk to combine.
4. Pour batter into the loaf pan and bake for 50-60 minutes, or until bread is brown and passes the toothpick test.
