Moist & Tasty:) I added 1/2c coconut & 1/4c chocolate chips.
This was a family favorite that I made over. My makeover included substituting applesauce for oil and 2 egg whites for a single egg, reducing the sugar, substituting whole wheat flour for all-purpose and upping the baking soda.
The result was a tasty, satisfying, hearty version that allowed me a “treat” that wasn’t too sweet. And thanks to Tammie who introduced me to subbing applesauce for oil many, many years ago.
Preheat oven to 350 F.
Put the bananas into a mixing bowl. With an electric mixer “mash” bananas until smooth. Add sugar, applesauce, egg whites and vanilla. Mix well. Mix in baking soda and salt. Blend in flour with a spoon until just mixed.
Pour the batter into a greased 5”x9” pan and bake for 45 minutes at 350 F.
