My son refers to this as “Happy Cake” because when I make it, he’s very happy to eat it.
I bake it in a square pan, but you can cook it in a loaf pan if you’d like—just increase the baking time to about 50 minutes.
Preheat the oven to 350ºF. Grease an 8×8 square cake pan.
Mix the bananas, egg, mayonnaise, sugar, orange rind, vanilla extract and orange juice or soda together in a large bowl.
Combine flour, salt, cinnamon and baking soda and then add in by thirds until combined.
Pour the batter in the pan (you can sprinkle a little cinnamon and sugar on the top prior to baking) and bake for 25-30 minutes, until the bread is medium golden brown. Remove from the pan to a rack.
